Ingredients

  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup peanut butter (Jif brand recommended)
  • 2 Tbsp salted butter, room temperature
  • 1 tsp vanilla extract
  • 1 1/2 cups self-rising flour
  • (Note: If using all-purpose flour, add 1 Tbsp baking powder and 1/2 tsp salt)

Instructions

  1. Mix Base: In a large mixing bowl, combine the eggs, granulated sugar, light brown sugar, and room-temperature butter. Mix until well combined.
  2. Form Batter: Add the peanut butter, vanilla extract, and self-rising flour. Stir until a thick batter forms and no dry flour remains.
  3. Prepare Pan: Spread the thick batter evenly into a greased 11x7-inch or 9x9-inch baking pan.
  4. Bake: Bake at 350°F for 35 minutes.
  5. Cool: Place the pan on a wire rack or cookie sheet to cool completely.
  6. Frost: Once cooled, top the bars with a generous layer of Peanut Butter Frosting (Master Cookbooks Recipe # 354) for the perfect finish

Notes

Tammy’s Tips

For that authentic Collard Valley taste, I recommend using Jif peanut butter. To ensure your bars have the perfect texture, be careful not to overmix the batter once you add the flour,just stir until it's combined. These are even better the next day once the frosting has had a chance to set!
