Peanut Butter Cake - Master Cookbook Recipe # 244
This cake is a peanut butter lover's absolute dream. By using a mix of both creamy and crunchy peanut butter, you get a deep, nutty flavor with just a hint of texture. The combination of butter, shortening, and buttermilk ensures the cake is incredibly tender and moist.

Ingredients
- 1/4 cup shortening
- 1/2 cup salted butter, room temperature
- 1-1/2 cups granulated sugar
- 3 large eggs, room temperature
- 1 cup peanut butter (Tammy uses 1/2 cup crunchy and 1/2 cup creamy)
- 2 cups self-rising flour
- 1-1/2 cups whole buttermilk
- 1/2 cup water
Instructions
- Cream: Using an electric mixer, blend the butter and shortening together. Add the sugar and beat until the mixture is light and fluffy.
- Combine: Scrape the sides of the bowl. Add the eggs one at a time, mixing well after each addition. Mix in the peanut butter until fully incorporated.
- Mix Batter: Add 1 cup of the self-rising flour. Alternating between the two, mix in the buttermilk and the water. Finally, add the remaining flour and beat the batter for exactly 2 minutes.
- Bake: Grease or spray a 13" x 9" x 2" baking pan and pour in the batter. Bake at 325°F for 40 to 50 minutes, or until a toothpick inserted in the center comes out clean.
- Alternative (Round Layers): If you prefer to bake this in round cake layers, increase the oven temperature to 350°F and begin checking for doneness after 35 minutes.
