Peach Cobbler Singles - Master Cookbook Recipe # 20

This recipe is a blessing when you want that warm, comforting taste of a homemade peach cobbler without making a whole pan. It creates a beautiful, cake-like crust that rises up around the sweet peaches, making a perfect individual treat.

Ingredients

  • 14.5 oz. can sliced peaches in syrup
  • 1 Tbsp salted butter
  • 1/8 cup granulated sugar
  • 1/8 cup milk
  • 1/8 cup self-rising flour
  • Optional: Chopped pecans, cinnamon, nutmeg, and white sugar crystals

Instructions

  1. Prep Ramekin: Spray a ramekin with cooking spray. Place the tablespoon of butter in the bottom.
  2. Mix Batter: In a small bowl, whisk together the granulated sugar, milk, flour, and seasonings (cinnamon/nutmeg) until smooth.
  3. Fill: Pour the batter into the ramekin until it is about half full.
  4. Add Fruit: Spoon peaches and a little of the syrup into the ramekin on top of the batter until it is 3/4 full.
  5. Note: Do not overfill, or it may bubble over during cooking.
  6. First Bake: Place the ramekin in the air fryer and bake at 320°F for 8 minutes.
  7. Sugar Crust: Carefully sprinkle the top with white sugar crystals (and pecans if using).
  8. Final Bake: Bake for an additional 8 minutes (16 minutes total) until the crust is golden and set.
  9. Conventional Oven Method:
  10. Place the ramekins on a baking sheet and bake at 375°F for 30 minutes.

Notes

  • Crunch Factor: Adding chopped pecans and that extra sprinkle of sugar before the final bake creates a wonderful "crunch" that contrasts with the soft peaches.
  • Variations: You can easily swap the peaches for canned pie fillings or other fruits packed in syrup like pears or cherries.
  • Serving: This is best served warm, perhaps with a small scoop of vanilla bean ice cream on top!
