Cobbler Biscuit Topping - Master Cookbook Recipe # 466
This is the secret to a perfect, old-fashioned fruit cobbler! This Cobbler Biscuit Topping from the Collard Valley Cooks Master Cookbook is light, flaky, and just sturdy enough to soak up all those delicious fruit juices without getting soggy. It’s a versatile base that works beautifully with peaches, berries, or apples.
This is recipe #466 in Tammy’s Master Cookbook.
Ingredients
- 1 cup self-rising flour
- 4 Tbsp salted butter, room temperature
- 1/2 cup milk
- Extra flour (for dusting)
Instructions
- Cut in Butter: In a medium mixing bowl, combine the self-rising flour and the room-temperature salted butter.
- Blend: Use a fork to work the butter into the flour. Continue blending until the mixture looks crumbly and the butter pieces are about the size of small peas.
- Add Milk: Pour in the milk and stir gently until all the flour is just incorporated and a soft dough forms.
- Knead: Turn the dough out onto a lightly floured surface. Knead it gently 4 to 5 times just to bring it all together (don't overwork it!).
- Roll: Using a rolling pin, roll the dough out until it is approximately 1/4 inch thick.
- Apply: Place the dough over your prepared fruit filling in your baking dish and proceed with your cobbler recipe.
Notes
Tammy’s Tips
The key to a flaky topping is keeping those little "peas" of butter intact; they create steam pockets as the cobbler bakes, which gives you that wonderful lift. If your dough feels a bit too sticky to handle, just add a tiny sprinkle of extra flour to your hands and the rolling pin. I love using this topping for Tammy’s Favorite Peach Cobbler because it has that perfect homemade biscuit texture that soaks up the syrup just right!
