Ingredients

  • 2 (15 oz) cans sliced peaches in syrup
  • 3/4 cup self-rising flour
  • 3/4 cup granulated sugar
  • 1/4 tsp salt
  • 3/4 tsp vanilla extract
  • 3/4 cup milk
  • 1/2 cup (1 stick) salted butter
  • 1/8 cup chopped pecans (optional)
  • Ground nutmeg (optional)
  • Ground cinnamon (optional)

Instructions

  1. Prep the Dish: Preheat your oven to 375°F. Melt the salted butter in the microwave and pour it into a 2-quart casserole dish. Lightly spray the edges of the dish with cooking spray to prevent sticking.
  2. Mix the Batter: In a medium bowl, whisk together the self-rising flour, granulated sugar, salt, vanilla extract, and milk until smooth.
  3. Layer: Pour the batter mixture directly into the casserole dish over the melted butter. Do not stir!
  4. Add Peaches: Pour the canned peaches (including the syrup) over the batter.
  5. Garnish: If desired, sprinkle the top with ground cinnamon, ground nutmeg, and chopped pecans for extra flavor and crunch.
  6. Bake: Place in the oven and bake for approximately 45 minutes, or until the top is golden brown and the peach filling is bubbly.
  7. Serve: Let it cool slightly, then serve warm with a big scoop of vanilla ice cream!

Tammy’s Tips

This is a "dump-style" cobbler, so the secret is not to stir the layers once you put them in the dish! As it bakes, the batter will rise up around the peaches to create that beautiful, cake-like crust. If you want to switch things up, you can easily substitute the peaches for other canned fruits like blackberries or cherries. For the best flavor, I always recommend using a good quality vanilla extract.
