Ingredients

  • 1/2 cup salted butter
  • 1/2 cup dark brown sugar, packed
  • 1/4 cup corn syrup (Karo brand recommended)
  • 1 tsp vanilla flavoring
  • 2 cups quick oats
  • 1 cup chocolate chips

Instructions

  1. Melt Butter: Place the salted butter in a microwave-safe dish (9x9 or 7x11 inch) and heat on high for 1 minute.
  2. Mix Base: Remove the dish and add the dark brown sugar, corn syrup, and vanilla extract. Stir until the mixture is well combined.
  3. Add Oats: Stir in the quick oats and mix thoroughly until every oat is coated.
  4. Press and Cook: Press the mixture evenly into the base of the dish. Microwave on high for 2 minutes.
  5. Add Chocolate: Carefully remove the dish and sprinkle the chocolate chips evenly over the surface. Return to the microwave and heat for 1 more minute.
  6. Cool and Set: Let the bars cool completely to room temperature before cutting them into squares and serving.

Tammy’s Tips

These instructions are based on an 1100-watt microwave, so be sure to slightly reduce the cooking time if yours has a higher wattage. For the best texture, resist the urge to cut into them too early; letting them cool completely allows the bars to set up so they don't fall apart.
