Ingredients

  • 1/4 cup shortening
  • 3/4 cup salted butter, room temperature
  • 1 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp cloves (optional)
  • 2 cups 1-minute quick-cooking oats
  • 1 1/2 cups all-purpose flour
  • Pecans and/or raisins (optional)

Instructions

  1. Prep: Preheat your oven to 375°F. Grease a baking sheet or line it with parchment paper.
  2. Cream Fats and Sugars: In a large bowl, beat together the shortening, room-temperature butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
  3. Add Wet Ingredients: Mix in the eggs and vanilla extract until well combined.
  4. Incorporate Spices: Add the baking soda, salt, baking powder, cinnamon, and the optional cloves.
  5. Add Oats and Flour: Stir in the oatmeal first, then gradually add the all-purpose flour, mixing until just combined. If you are using pecans or raisins, fold them in now.
  6. Form and Bake: Drop the dough by teaspoons onto the prepared baking sheet. Bake for 12 minutes.
  7. Cool: Let the cookies cool on the pan for a few minutes before transferring them to a wire rack.

"These are simple oatmeal cookies. We love them just like this, but without the cloves! It is hard not to eat this cookie dough!" For the best results, make sure your butter is truly at room temperature so it creams perfectly with the shortening. If you like a little extra texture, definitely toss in a handful of chopped pecans!
