This is a truly timeless Southern dessert that Tammy calls one of the most delicious cakes she has ever tasted. By soaking the oats in boiling water first, you create an incredibly moist, dense texture that pairs perfectly with the warm notes of cinnamon and nutmeg. It’s a simple "lazy" cake that delivers bakery-quality flavor every time.

Ingredients

  • 1 cup 1-minute oatmeal
  • 1-1/4 cup boiling water
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 1 cup salted butter, room temperature
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1-1/2 tsp baking powder
  • 2 cups all-purpose flour
  • (Note: You can use self-rising flour and omit the salt, soda, and baking powder)

Instructions

  1. Soak the Oats: Boil your water and pour it over the 1-minute oatmeal in a small bowl. Let it stand while you prepare the rest of the batter.
  2. Cream: In a large mixing bowl, cream the room-temperature butter with the granulated and brown sugars until smooth. Mix in the eggs and vanilla.
  3. Spice it up: Add the cinnamon, nutmeg, salt, baking soda, and baking powder. Mix thoroughly to ensure the leavening agents are well distributed.
  4. Combine: Stir the soaked oatmeal into the wet mixture, then gradually add the flour until just combined.
  5. Bake: Pour the batter into a greased 13x9 inch pan. Bake at 325°F for 40 to 50 minutes, or until the cake is golden and a toothpick inserted in the center comes out clean.
