Ingredients

  • 1 pie shell
  • 1/2 lb. breakfast sausage (Swaggerty’s Farm recommended)
  • 1 small onion, diced (optional)
  • 1-1/2 cups cheddar cheese, shredded
  • 4 large eggs, beaten
  • 1 cup half and half
  • 1/2 tsp onion powder
  • 1/4 cup salted butter, melted
  • 1/2 tsp black pepper
  • 1/4 cup self-rising flour
  • Note: If using all-purpose flour, add 1/2 tsp baking powder.

Instructions

  1. Pre-bake Shell: Preheat your oven to 400°F. Bake the pie shell for 20 minutes, then reduce the oven temperature to 350°F.
  2. Cook Sausage: In a skillet, cook the sausage with the diced onion (if using) until browned. Drain the excess grease well.
  3. Mix Filling: In a medium bowl, whisk together the beaten eggs, half and half, onion powder, melted butter, and black pepper. Add the flour and whisk until the mixture is smooth.
  4. Combine: Stir the cooked sausage, onion, and 1 cup of the shredded cheese into the egg mixture.
  5. Bake: Pour the filling into the pre-baked pie shell. Bake at 350°F for 40 minutes.
  6. Top & Finish: Sprinkle the remaining 1/2 cup of cheese on top. Bake for an additional 20 minutes.
  7. Check for Doneness: The pie is done when the middle has risen as high as the sides. This may take a few extra minutes depending on your oven.

Notes

Pro Tip: Let the pie rest for 5 to 10 minutes after taking it out of the oven to allow the filling to set before slicing!
