Ingredients
- 2 cups self-rising flour
- 2 cups whole buttermilk (or 1 3/4 cup low-fat buttermilk)
- 1/4 cup salted butter, melted
- 2 Tbsp sugar
- 1 large egg
- 1 tsp vanilla extract
- Optional: Sausage links or patties for serving
Instructions
- Melt Butter: In a glass or microwave-safe bowl, melt the salted butter.
- Mix Wet Ingredients: Add the sugar to the melted butter and mix well. Whisk in the egg, vanilla extract, and buttermilk until the mixture is thoroughly combined.
- Combine: Add the self-rising flour to the wet ingredients and whisk until the batter is smooth.
- Preheat Skillet: Heat a flat, non-stick skillet over medium heat.
- Note: If using a high-quality non-stick skillet, no grease is needed. For older skillets, lightly spray with cooking spray.
- Pour Batter: Use a 1/2 cup scoop to add batter to the skillet, gently spreading it into a circle.
- Flip: Wait for bubbles to form across the entire surface of the pancake. Flip with a flat spatula and brown the other side.
- Adjust Heat: Adjust your stove temperature as needed to reach your desired level of browning (medium is recommended for gas stoves).
- Serve: Serve warm with plenty of butter and your favorite pancake syrup.
- Variations:
- Thin Pancakes: Use regular milk instead of buttermilk. The batter will be thinner; use a 1/3 cup scoop for each pancake.
- Sausage: Cook your favorite sausage patties or links in a separate skillet to serve alongside for the full experience.

Pro Tip: Don't rush the flip! Waiting for those bubbles to appear across the top ensures the middle is set and the bottom is perfectly golden.
