Biscuit Mix Pancakes - Master Cookbook Recipe # 113

By using your own homemade biscuit mix, you get a pancake that is fluffier and more flavorful than anything from a store-bought box. The addition of vanilla and a little extra sugar turns that savory biscuit base into a sweet, melt-in-your-mouth breakfast treat.

Ingredients

  • 2 cups homemade biscuit mix (Master Cookbook Recipe # 112)
  • 1 3/4 cup milk
  • 1 large egg
  • 2 Tbsp sugar
  • 1 tsp vanilla extract

Instructions

  1. Mix: In a medium bowl, combine the biscuit mix, milk, egg, sugar, and vanilla extract. Whisk until the ingredients are just combined into a smooth pancake batter.
  2. Heat: Lightly grease a non-stick skillet or griddle and place over medium heat.
  3. Pour: For each pancake, pour about 1/4 to 1/3 cup of batter onto the hot skillet.
  4. Cook: Watch for bubbles to appear uniformly across the top of the dough.
  5. Flip: Once bubbly, flip the pancake and finish cooking until the other side is a beautiful golden brown.
  6. Serve: Stack them high and serve warm with a pat of butter and your favorite pancake syrup!

Notes

Pro Tip: If the batter seems too thick, add a splash more milk. If you like them extra fluffy, let the batter sit for just a minute or two before you start pouring!
