Sausage Balls from Scratch - Master Cookbook Recipe # 42

These sausage balls are a Collard Valley Cooks classic,perfect for breakfast, appetizers, or holiday snacking!

Ingredients

  • 2 cups self-rising flour
  • 2 large eggs
  • 1 lb. breakfast sausage (Tammy recommends half hot, half mild Swaggerty’s Farm)
  • 1/2 cup salted butter, melted
  • 1 Tbsp no-salt salad blend
  • 1 Tbsp onion powder (or granulated onion, or 3 Tbsp minced green onion and parsley), Use NO SALT seasonings
  • 16 oz. sharp cheddar cheese, freshly grated

Instructions

  1. Prep Butter: Melt the butter in a microwave-safe bowl.
  2. Combine: In a large bowl, add the melted butter, sausage, eggs, spices, and self-rising flour.
  3. Mix: Mix well by hand (or use a stand mixer) until the ingredients are evenly blended.
  4. Add Cheese: Pour the grated cheese onto your counter. Knead the cheese into the dough a little at a time until it is thoroughly incorporated.
  5. Shape: Pinch off pieces of dough and roll them into balls approximately one inch in diameter.
  6. Bake: Place the balls on a parchment-lined baking sheet. Bake at 350°F for 25 minutes.
  7. Store: Refrigerate any leftovers.

Notes

  • The Cheese Secret: Always shred your cheese from a block! Pre-shredded cheese has coatings that affect the texture and flavor.
  • Mixing: A stand mixer makes combining the heavy sausage dough much easier on your hands.
  • Pan Prep: If you don't have parchment paper, be sure to spray your baking sheet with oil or cooking spray to prevent sticking.
  • Safety First: Because these contain meat, don't leave them out at room temperature for more than three hours. Keep them in an airtight container in the fridge.
