These Pizza Popovers are a fun and delicious twist on a classic pizza night. Using refrigerated dough and frozen meatballs makes them incredibly quick to assemble, perfect for a busy weeknight or a game-day snack!

Ingredients

  • 2 cans Refrigerated Pillsbury pizza dough
  • 12-24 Frozen Italian-style meatballs
  • 1 cup Mozzarella cheese or Italian cheese blend
  • 1/2 cup Pizza sauce or marinara
  • 1/4 cup Salted butter, melted
  • 2 Garlic cloves, pressed
  • Cooking spray (Olive oil)
  • Pizza seasoning
  • Optional: Sautéed onions, peppers, or pepperoni for topping

Instructions

  1. Prep Garlic Butter: In a small cup, combine the melted butter and pressed garlic. Set aside.
  2. Prepare Pan: Generously spray a 12-cup muffin pan with olive oil cooking spray.
  3. Bottom Crust: Unroll the first package of pizza dough. Drape it over the muffin pan and gently press the dough into each cup. Poke small holes in the bottom of each dough cup to help with shaping.
  4. Fill: Add 1 tablespoon of marinara sauce to each cup. Follow with 2 meatballs (depending on size), a generous sprinkle of cheese, and pizza seasoning.
  5. Top Crust: Unroll the second sheet of pizza dough and place it over the top of the filled muffin pan.
  6. Seal: Use a pizza cutter to cut between the cups. Fold the top dough over the bottom dough in each cup to seal the popover.
  7. Finish & Bake: Brush the tops with the prepared garlic butter. If desired, place a slice of pepperoni on top. Bake at 400°F for 15 to 20 minutes or until the dough is golden brown and cooked through.

Notes

Pro Tips -

  • Prep Your Veggies: If you want to add onions or bell peppers, sauté them in a pan before adding them to the popovers to ensure they are fully cooked.
  • Meatball Size: If your meatballs are large, you may only need one per cup. If they are small, two fit perfectly!
