  • 4 Tbsp salted butter
  • 1/2 cup milk
  • 2 eggs, beaten
  • 8 oz. tomato sauce
  • 2 cups mozzarella cheese, shredded
  • 3 oz. pepperoni slices
  • 1/4 cup bell pepper, chopped
  • 1/4 cup onion, chopped
  • 8 oz. can sliced mushrooms, drained
  • To taste: Pizza or Italian seasonings

Instructions

  1. Prepare the Base: Cook the macaroni according to the package directions. Drain well, but do not rinse the pasta.
  2. Mix: Stir in the milk, the cheese packet, and the butter until creamy. Finally, stir in the beaten eggs until well combined.
  3. Initial Bake: Transfer the mixture to a greased 13x9x2-inch baking dish. Bake at 375°F for 10 minutes to set the "crust."
  4. Add Toppings: Remove from the oven and increase the oven temperature to 425°F. Spread the tomato sauce evenly over the mac and cheese.
  5. Layer: Sprinkle with Italian seasonings, then layer on the shredded mozzarella, chopped bell pepper, onion, mushrooms, and pepperoni. Add a final sprinkle of seasonings on top.
  6. Final Bake: Bake at 425°F until the pepperoni is crisp and the cheese is brown and bubbly around the edges.

Notes

Tammy’s Tips Don't skip the eggs! They are what hold the macaroni together so you can actually slice it like a pizza. This is a very versatile recipe, feel free to swap the pepperoni for cooked sausage or extra veggies. It's a great "fridge-clearing" meal that the kids will absolutely love.
