Ingredients

  • The Crust:
  • 1 cup All-purpose flour
  • 1/2 tsp Salt
  • 2 large Eggs
  • 2/3 cup Milk
  • Grease: Shortening or meat drippings (for the skillet)
  • The Toppings:
  • Meat: Browned breakfast sausage and/or bacon
  • Gravy: 1 recipe of One Cup Gravy (Master Cookbook Recipe # 172)
  • Eggs: 5 large eggs
  • Cheese: 1 1/2 cups shredded cheese
  • Optional: Extra seasonings or vegetables of your choice

Instructions

  1. Prepare the Base: In a mixing bowl, thoroughly whisk together the flour, salt, 2 eggs, and milk.
  2. Initial Bake: Pour the mixture into a well-greased 10-inch cast-iron skillet. Distribute your browned sausage and bacon over the "runny" crust. Bake at 425°F for 20 minutes. The crust should pull away from the sides.
  3. Add Gravy: Remove the skillet from the oven and spread your prepared One Cup Gravy over the crust.
  4. Add Eggs: Carefully crack 5 eggs on top of the gravy layer. Season the eggs with salt and pepper.
  5. Second Bake: Return the skillet to the oven at 450°F and bake for 10 minutes.
  6. Finish: Open the oven and sprinkle the shredded cheese over the top. Bake for an additional 5 to 10 minutes until the cheese is bubbly and the eggs are cooked to your preference.
