This is recipe #378 in Tammy’s Master Cookbook.
Ingredients
- 1/2 cup granulated sugar
- 1/2 cup corn syrup (Karo brand)
- 3/4 cup peanut butter
- 2-1/2 cups cornflakes (Kellogg's brand)
- 1/4 tsp salt
Instructions
- Boil: Combine the sugar and corn syrup in a saucepan and bring to a boil for 2 minutes.
- Incorporate: Add a dash of salt, remove from the heat, and stir in the peanut butter until it is completely melted and smooth.
- Mix: Gently fold in the cornflakes until they are well-coated; note that the mixture will be quite stiff.
- Set: Drop spoonfuls of the mixture onto waxed paper and let them sit until cool and firm.
- Variation: For a softer, bar-style candy, boil the sugar mixture for only 1 minute, mix as directed, and press the mixture into a brownie pan before cutting into squares.
Notes
Tammy’s Tips
Make sure you have your cornflakes measured and ready to go, as the sugar mixture sets up very quickly once removed from the heat. If you prefer a thinner coating, you can slightly increase the amount of cornflakes to 3 cups for an extra crunchy texture. These store beautifully in an airtight container, making them a perfect make-ahead treat for the family!
