Peach Frosting - Master Cookbook Recipe # 290

Ingredients
- 1/2 stick (4 Tbsp) Salted butter (room temperature)
- 4 oz. Cream cheese (room temperature)
- 3 1/2 cups Powdered sugar
- Remaining chopped peaches (from Master Cookbook Recipe # 289, well-strained)
Instructions
- Cream Base: In a medium mixing bowl, beat the softened salted butter and room-temperature cream cheese together until smooth and creamy.
- Add Sugar: Gradually add the powdered sugar, about one cup at a time, mixing on low speed until fully incorporated and the frosting is fluffy.
- Fold in Fruit: Gently fold in the chopped peaches.
- CRITICAL STEP: Ensure the peaches have been strained VERY WELL. If they are too syrupy, the icing will become runny and won't hold its shape.
- Frost: Spread the frosting evenly over the cooled Peaches and Cream Cake (Master Cookbook Recipe # 289).
- Chill: For the best consistency and flavor, chill the finished cake in the pan before slicing and serving.

Tammy’s Tips
"Make sure the peaches are not too syrupy, or the icing will be runny!" If you find your frosting is getting a little too soft after adding the fruit, you can add a touch more powdered sugar or pop the bowl in the refrigerator for 15 minutes to firm it up before spreading.
