Ingredients
- 1/8 cup Meat drippings (from sausage or bacon)
- 1/8 cup All-purpose or self-rising flour
- 1 cup Whole milk
- Dash Salt
- Dash Black pepper
Instructions
- Prep the Skillet: Use the skillet where you just fried your breakfast meat. Ensure you have approximately 1/8 cup of flavorful drippings left in the pan.
- Make the Roux: Add the flour directly to the drippings. Stir constantly with a whisk over medium heat until the flour is well incorporated and begins to bubble.
- Add Milk: Gradually pour in the milk while whisking continually to prevent any lumps from forming.
- Season: Add a dash of salt and black pepper to taste.
- Thicken: Continue to stir until the mixture reaches a boil and thickens.
- Finish: As soon as the gravy boils and reaches your desired consistency, turn off the heat. Serve immediately.
Notes
Pro Tips -
- The Golden Rule: For the best flavor, don't scrape out the little browned bits (fond) from the bottom of the pan, that is where all the savory goodness lives!
- Consistency: If you prefer a thinner gravy, simply whisk in an extra tablespoon of milk at the end.
- Perfect for Master Cookbook Recipe # 171: This is the exact amount needed to layer onto your Breakfast Pizza before adding the eggs and cheese.
