  • 6 oz can Tomato paste
  • 2 cups Hot water
  • 2 tsp Beef bouillon granules
  • 2 Tbsp Shortening
  • 2 Tbsp Salted butter
  • 1/4 cup Self-rising flour
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 cup Milk
  • 1/4 tsp Salt (additional)
  • Optional: A pinch of sugar to taste

Instructions

  1. Soften Vegetables: In a saucepan over medium heat, cook the chopped onion and diced tomatoes until they are soft.
  2. Prep Liquid: Whisk the tomato paste into the hot water until blended, then stir in the beef bouillon granules.
  3. Make the Roux: Melt the shortening and butter in a large, deep skillet over medium-high heat. Sift in the flour, add salt and pepper, and whisk constantly until the mixture turns golden brown.
  4. Thicken: Slowly whisk in the tomato/water mixture and the milk. Continue whisking until the gravy is smooth and creamy.
  5. Finish: Stir in the cooked onion and tomato mixture. Remove from heat once thickened to your liking.
  6. Serve: Best enjoyed over homemade, open-faced buttermilk biscuits.
