Old Fashoned Mac n Cheese - Master Cookbook Recipe # 323

Ingredients
- 3 cups macaroni noodles, cooked and drained
- 1/2 cup salted butter
- 1/4 cup all-purpose flour, sifted
- 4 cups milk
- 4 cups shredded cheddar cheese (divided)
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Make the Roux: In a large saucepan, melt the butter over medium-high heat. Whisk in the sifted flour, salt, and black pepper until the mixture is smooth and begins to turn a light golden brown.
- Thicken Sauce: Gradually pour in the milk, whisking constantly. Continue to cook and whisk until the sauce becomes thick and starts to bubble.
- Add Cheese: Remove the saucepan from the heat. Stir in 3 cups of the shredded cheese until it is completely melted and the sauce is velvety.
- Combine: Fold the cooked macaroni noodles into the cheese sauce until every noodle is well-coated.
- Assemble: Transfer the mixture into a greased casserole dish. Sprinkle the remaining 1 cup of shredded cheese evenly over the top.
- Bake: Bake at 350°F for 40 minutes, or until the cheese on top is bubbly and golden brown. Serve while it’s nice and warm!
Notes
Tammy’s Tips For the very best results, grate your own cheese from a block,it melts much smoother than the pre-shredded kind! If you like a little extra "crust" on your mac and cheese, you can even turn on the broiler for the last 2 minutes of baking, just keep a close eye on it so it doesn't burn.
