This version uses a full stick of butter for an extra rich, buttery crunch. It’s the perfect quick way to get that authentic Southern brittle flavor using your microwave!

Ingredients

  • 1/2 cup Salted butter
  • 1/4 tsp Salt
  • 1/2 cup Light corn syrup
  • 1 cup Granulated sugar
  • 1 heaping cup Raw peanuts (skins on)
  • 1 tsp Vanilla extract
  • 1-1/2 tsp Baking soda

Instructions

  1. Roast the Peanuts: Since peanuts won't toast in the microwave, roast them on a cookie sheet at 350°F for 8 minutes first. This is essential for the best flavor!
  2. Combine: In a glass batter bowl, stir together the roasted peanuts, sugar, corn syrup, and salt.
  3. First Heat (3 mins): Microwave on high for 3 minutes. Remove and stir well.
  4. Second Heat (3 mins): Microwave for 3 more minutes.
  5. Note: Watch for the candy to start turning golden brown.
  6. Add Butter & Vanilla: Stir in the butter and vanilla extract, then microwave for a final 2 minutes.
  7. Tip: Use the "cold water test",drop a bit in water; if it forms a hard string, it's ready!
  8. The Foam: Add the baking soda and stir quickly until the mixture becomes light and foamy.
  9. Set: Immediately pour the mixture onto a lightly buttered cookie sheet. Let it cool completely until hardened, then break into pieces.

Notes

Important Tip from Collard Valley Cooks: Microwave wattages vary! These instructions are based on a 1000-watt microwave. Keep a close eye on it toward the end,you want a beautiful golden brown, but be careful not to burn it!
