These classic Peanut Butter Buckeyes are a beloved Southern staple, featuring a creamy, melt-in-your-mouth peanut butter center partially dipped in smooth semi-sweet chocolate. Ingredients

  • 2 cups powdered sugar
  • 1/4 tsp salt
  • 1/2 cup salted butter (room temperature)
  • 1/2 cup creamy peanut butter (Jif brand recommended)
  • 1 tsp vanilla extract
  • 1-1/2 cups semi-sweet chocolate chips
  • 1-1/2 tsp shortening

Instructions

  1. Prepare the Peanut Butter Base: In a mixing bowl, combine the powdered sugar, salt, butter, and peanut butter. Mix until the consistency is completely smooth.
  2. Flavor: Blend in the vanilla extract until well incorporated.
  3. Shape and Chill: Roll the mixture into small balls. Insert a toothpick into each one and place them on a tray lined with parchment paper. Transfer to the freezer until firm.
  4. Melt the Coating: Place the semi-sweet chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until smooth. Stir in the shortening to give the chocolate a nice sheen and better dipping consistency.
  5. Dip: Take the frozen peanut butter balls and dip them into the melted chocolate. Leave a small circle of the peanut butter exposed at the top (to give them that classic "Buckeye" look).
  6. Set: Let the excess chocolate drip off, then place them back onto the parchment paper to dry.

Notes

Tammy’s Tips

To hide the toothpick holes, simply use your finger or a small spatula to gently smooth over the peanut butter after removing the pick. Work in small batches from the freezer so the candy stays firm, and don't be afraid to give your chocolate a quick 10-second reheat if it starts to thicken up while dipping!
