Home Fries - Master Cookbook Recipe # 16

Making homemade French fries in the air fryer gives you that perfect restaurant-style crunch with a fraction of the oil. The secret to these "Collard Valley Cooks" fries is the light flour dusting, which creates a beautiful golden crust that holds onto the seasonings.

This is recipe #16 in Tammy’s Master Cookbook.

Ingredients

  • 3 medium potatoes
  • 3 Tbsp olive or vegetable oil
  • 1/4 cup all-purpose flour
  • Kosher salt to taste
  • Black pepper to taste
  • Onion powder (salt-free)
  • Roasted garlic powder (salt-free)
  • Optional: Cooking oil spray

Instructions

  1. Prep the Potatoes: Wash the potatoes thoroughly. Leave the skin on for extra texture and flavor. Cut them into "fries" about half an inch thick.
  2. Season: Spread the fries out on a tray or in a large bowl. Season generously with kosher salt, black pepper, onion powder, and roasted garlic powder.
  3. Oil Coat: Toss the seasoned fries in the olive or vegetable oil until every piece is evenly coated.
  4. The Flour Secret: Sprinkle the all-purpose flour over the fries and toss again. The flour should stick to the oil and seasonings to create a light batter.
  5. First Bake: Place the fries in the air fryer basket. Set the temperature to 380°F and set the timer for 25 minutes.
  6. Shake & Spray: Halfway through the cooking time (around 12 to 13 minutes), pull the basket out and give the fries a good shake. Lightly spray them with a little oil spray to help them brown further.
  7. Finish: Continue cooking until the fries are deep golden brown and crispy. Serve hot!

Notes

  • Skin On: Leaving the skins on doesn't just save time; it adds a rustic flavor and helps the fries hold their shape.
  • Even Sizing: Try to cut your potatoes into uniform strips so they all finish cooking at the same time.
  • Dipping Ideas: These are perfect with classic ketchup, but try them with Recipe #603: Honey Mustard or a spicy ranch for something different!
