Potato Skins - Master Cookbook Recipe # 21

These potato skins are the perfect appetizer or snack. By using the air fryer, you get a much crispier skin than a traditional oven, and the cheese melts into every nook and cranny.

Ingredients

  • 3 russet potatoes
  • 3 Tbsp melted salted butter (or olive oil)
  • Cheddar cheese slices (enough to cover the skins)
  • 1/2 cup sour cream
  • 3 green onions, diced
  • Salt and pepper to taste

Instructions

  1. Prepare the Potatoes: Microwave the potatoes until they are tender. Let them cool slightly so you can handle them.
  2. Cut & Scoop: Cut one-half-inch slices from each side of the potato to create the "skins." Reserve the potato insides for another use (like mashed potatoes or potato cakes!).
  3. Season: Brush the potato skins generously with melted butter (or olive oil) and season with salt and pepper.
  4. Air Fry: Place the skins in the air fryer basket, skin side down. Cook at 350°F for 10 minutes until the edges are crispy.
  5. Melt Cheese: Place a cheddar cheese slice onto each skin. Air fry for an additional 2 minutes until the cheese is melted and bubbly.
  6. Serve: Top with a dollop of sour cream and a sprinkle of diced green onions.
  7. Conventional Oven Method:
  8. Bake the skins at 425°F for 14 minutes, then add the cheese and continue baking for an additional 4 minutes.

Notes

  • The Sliced Cheese Secret: When using an air fryer, always use cheese slices instead of grated cheese. The fan in the air fryer is so powerful it can blow shredded cheese right off your food!
  • Extra Crispy: If you want that extra-toasty finish, you can broil the skins for 1 to 2 minutes after adding the cheese.
