This rich, decadent stovetop fudge icing is a Southern classic that brings back memories of Mama’s kitchen. It’s a smooth, chocolatey frosting that hardens into a beautiful fudge-like finish, making it the ultimate topping for your favorite yellow or chocolate layer cakes.

Ingredients

  • 3 cups Granulated sugar
  • 3 heaping Tbsp Hershey’s cocoa
  • 1/2 tsp Salt
  • 12 oz. can Evaporated milk
  • 1/2 cup Salted butter
  • 1 Tbsp Corn syrup
  • 1 tsp Vanilla extract
  • 1/4 cup Jif peanut butter (optional)
  • 1/2 cup Pecans, chopped (optional)

Instructions

  1. Prep Dry Ingredients: In a separate bowl, mix the sugar, cocoa, and salt together thoroughly. Set aside.
  2. Prep the Pot: Place a nonstick pot over heat and add the butter. As it melts, use a fork to pick up the butter and coat the sides of the pot well to prevent sticking.
  3. Combine: Once the butter is melted, stir in the dry ingredients, corn syrup, and evaporated milk.
  4. Simmer: Keep the heat low and stir until the mixture begins to simmer and the sugar has mostly melted.
  5. The Two-Minute Boil: Cover the pot and turn the heat to high. Set a timer and cook for exactly 2 minutes.
  6. Check Temperature: Use a candy thermometer to ensure the mixture has reached the softball stage (234°F - 238°F).
  7. Rest: Remove from heat and let the mixture sit undisturbed for 5 minutes.
  8. The Transfer: Pour the icing into a mixing bowl. CRITICAL: Do not scrape the sides of the saucepan while transferring, as this can introduce sugar crystals and make the icing grainy.
  9. Beat & Flavor: If using peanut butter, add it now and mix on high. Add the vanilla and beat until well blended. If using pecans, fold them in and turn off the mixer immediately.
  10. Frost Quickly: Move fast! This icing begins to harden as it cools, so frost your cake while it's still pliable.
  11. Note: For a 3-4 layer cake, make at least 1 ½ recipes.

Tammy's Tips

Keep your utensils clean after the sugar melts to prevent stray granules from making the icing grainy.

Adding the optional peanut butter provides a deeper flavor and a creamier texture that pairs perfectly with chocolate.

If the icing thickens too quickly while frosting, stir in a tiny splash of milk to restore a smooth consistency.
