This "no-fuss" casserole is a favorite because it's incredibly hearty and easy to assemble. By layering the ingredients directly in the pan, you get a beautiful, rustic breakfast that is packed with protein and flavor.

Ingredients

  • 12 large Eggs
  • 1 cup Heavy cream (or half-and-half)
  • 16 oz. Cheddar cheese, shredded (or your favorite blend)
  • 1 lb. Pork breakfast sausage (Swaggerty’s Farm recommended)
  • 1 small can Mushrooms (optional)
  • 1/2 large Onion, chopped
  • 1 Green pepper, chopped
  • 2 Tbsp Salted butter
  • To taste Salt and black pepper

Instructions

  1. Prep Pan: Grease a 9-inch by 13-inch baking pan.
  2. Layer Eggs: Crack all 12 eggs directly into the prepared pan. Use a fork to poke each yolk or give them a very light scramble right in the dish.
  3. Add Cream & Cheese: Pour the heavy cream evenly over the eggs. Sprinkle half of the shredded cheese over the top of the egg mixture.
  4. Sauté Mix: In a skillet, brown the sausage and drain any excess grease. Add the butter, chopped onions, peppers, and mushrooms (if using) to the sausage. Cook until the vegetables are tender.
  5. Assemble: Spread the hot sausage and vegetable mixture evenly over the eggs and cheese layer. Top with the remaining shredded cheese.
  6. Bake: Bake at 350°F for 1 hour or until the eggs are completely set and the cheese is golden and bubbly.

  • The "Poke" Technique: Poking the yolks rather than fully beating the eggs gives the casserole a unique, marbled texture that is traditional for this specific recipe.
  • Drain the Sausage: Make sure to drain the sausage well before adding the vegetables and butter to keep the casserole from becoming oily.
