Ingredients
- 7 Frozen hashbrown patties
- 3/4 lb. (or 7 patties) Breakfast sausage (Swaggerty’s Farm recommended)
- 8 large Eggs
- 3/4 cup Milk
- 1 medium Onion, diced
- 1/2 cup Bell pepper, diced
- 1 1/2 cups Grated cheese
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- Cooking spray
Instructions
- Prep Components: Brown the hashbrown patties according to the package directions. In a skillet, fry the sausage, breaking it into small pieces as it browns.
- Mix Eggs: In a bowl, whisk together the eggs, milk, salt, black pepper, diced onion, and diced bell pepper.
- Layer: Spray a large casserole dish with cooking spray. Create a base layer with the browned hashbrowns, then sprinkle with half of the cheese.
- Assemble: Pour the egg mixture over the hashbrowns and cheese. Add the cooked sausage as the next layer, then top with the remaining cheese.
- Bake: Bake at 350°F for 1 hour.
- Test for Doneness: Pierce the center of the casserole with a large spoon and gently pull it back to ensure the egg liquid is fully set. Do not serve if the eggs are still runny; it may take a bit longer depending on your oven.
