Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup apple juice
  • 1/2 cup water
  • 2 Tbsp cornstarch

Instructions

  1. Slurry: In a small bowl, whisk the water and cornstarch together until completely smooth and well combined.
  2. Heat: Place the granulated sugar and apple juice in a small saucepan over medium heat, stirring until the sugar dissolves.
  3. Thicken: Add the water and cornstarch mixture to the saucepan. Continue to cook, stirring constantly, until the glaze comes to a boil and becomes thick and bubbly.
  4. Cool & Apply: Remove from heat and let it cool slightly. While still warm and pourable, use a brush or spoon to glaze fresh fruit on your cake or tart.

Notes

Tammy's Tips

This glaze is absolutely stunning on a cake topped with fresh strawberries, blueberries, and kiwi, especially over a whipped cream icing! If the glaze gets too thick as it cools, you can thin it back out with a tiny splash of warm water or juice. Using apple juice provides a great neutral sweetness that complements almost any fruit without changing its natural color.
