Buttermilk Glaze - Master Cookbook Recipe # 402
This isn't your average glaze; it’s a rich, sticky, caramel-like topping that transforms any cake into a decadent treat. It’s particularly famous for soaking into warm cakes, adding incredible moisture and a deep buttery flavor.
This is recipe #402 in Tammy’s Master Cookbook.
Ingredients
- 1 cup granulated sugar
- 1/2 cup salted butter
- 1/2 cup buttermilk
- 1 Tbsp clear corn syrup
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions
- Boil: Combine all ingredients (except the vanilla) in a medium saucepan.
- Thicken: Bring the mixture to a boil over medium heat. Continue to boil for 5 to 6 minutes, or until the mixture thickens and reaches a syrup-like consistency.
- Flavor: Remove from the heat and stir in the vanilla extract.
- Glaze: To glaze a sheet cake, poke holes across the top before pouring the glaze over so it soaks in. For a Bundt cake, simply pour over the top and let it beautifully drizzle down the sides.
Notes
Tammy's Tips
Because this glaze contains baking soda and buttermilk, it will foam up significantly as it begins to boil, so be sure to use a larger saucepan than you think you need to prevent boil-overs. It is much more like a thin caramel than a traditional sugar glaze, so make sure to pour it while it's still warm for the best "soak" and shine.
