Chocolate Strawberries - Master Cookbook Recipe # 30
These elegant treats are surprisingly simple to make at home. By using a blend of milk and semi-sweet chocolate with a touch of shortening, you get a smooth, professional finish that snaps perfectly when you bite into it.

Ingredients
- 1 lb. fresh strawberries (with leaves attached)
- 3/4 cup milk chocolate chips
- 3/4 cup semi-sweet chocolate chips
- 1/2 cup white chocolate chips (for drizzling)
- 1 Tbsp shortening
- Parchment paper
Instructions
- Prep Berries: Wash the strawberries and leaves gently. Crucial Step: Let them dry completely. Any moisture left on the berry can cause the chocolate to seize or slide off.
- Melt Chocolate: Combine the milk chocolate chips, semi-sweet chocolate chips, and shortening in a small, microwave-safe bowl (a tall, slender container works best for dipping).
- Heat: Microwave in 30-second intervals, stirring well after each one, until the chocolate is completely smooth.
- Dip: Holding the strawberry by the stem/leaves, dip it into the melted chocolate. Lift and gently shake off the excess.
- Set: Place the dipped strawberries onto a baking sheet lined with parchment paper.
- Drizzle: Melt the white chocolate chips (using the same 30-second interval method). Use a spoon to drizzle the white chocolate back and forth over the dark chocolate for a decorative finish.
- Final Dry: Let the strawberries sit at room temperature or in the fridge until the chocolate is firm. Store in an airtight container in the refrigerator.
Notes
- Why Shortening?: Do not substitute butter or oil for the shortening. Shortening helps the chocolate melt smoothly and set firmly; butter contains water which can cause your chocolate to seize into a clumpy mess.
- Bone Dry: Ensure the strawberries are "dehydrated" (completely dry to the touch) before dipping. This is the #1 secret to a successful chocolate coating.
- Easy Cleanup: Always use parchment paper; it ensures the chocolate doesn't stick to your pan and makes cleanup a breeze.
