Strawberry Topping - Master Cookbook Recipe # 421
This fresh strawberry topping is a wonderful addition to cheesecakes, ice cream, or shortcakes. It’s incredibly easy to prepare and captures the bright, sweet flavor of ripe berries perfectly.

Ingredients
- 16 oz. fresh ripe strawberries
- 3/4 cup granulated sugar
- 1 Tbsp strawberry gelatin (optional, for extra color and set)
Instructions
- Prep Berries: Rinse the strawberries well under cold water and remove the stems. Slice them into a medium-sized microwave-safe bowl.
- Heat: Add the granulated sugar on top of the sliced berries. Microwave on high for 3 minutes.
- Mash: Carefully remove the bowl and mash the strawberries with a hamburger separator (or potato masher) to combine the juices with the sugar.
- Finish: If desired, add the strawberry gelatin and mix well until fully dissolved.
- Cool: Pour the mixture into a shallow pie plate or pan to cool.
- Store: Once chilled, use immediately or refrigerate in an airtight container.
Notes
Tammy’s Tips This topping freezes beautifully, so it’s a great idea to make several batches while strawberries are in peak season. Cooling the mixture in a shallow dish like a pie plate helps it reach the right consistency much faster than leaving it in a deep bowl!
