Ingredients
- 1 Pie crust
- 2 lb. Fresh strawberries (cleaned and dried)
- 1 tsp Vanilla extract (optional)
- 10 drops Red food coloring
- Whipped cream or Cool Whip (for garnish)
- For the Glaze:
- 1 cup Strawberries
- 1 1/2 cups Granulated sugar (divided: 1/2 cup + 1 cup)
- 3/4 cup Water
- 4 Tbsp + 1 tsp Cornstarch
- 1/4 tsp Salt
Instructions
- Bake the Crust: Preheat your oven to 350°F. Bake the pie crust for 25 minutes or until golden brown. Let it cool completely.
- Prep Berries: Remove stems from the 2 lbs. of strawberries. Chop them into 3/4-inch pieces, reserving a few whole ones for garnish.
- Make Puree: Blend 1 cup of strawberries with 1/2 cup of sugar using a blender or stick blender until smooth.
- Cook the Glaze: In a glass microwave-safe bowl, whisk together the water, cornstarch, salt, and the remaining 1 cup of sugar. Stir in the strawberry puree.
- Thicken: Microwave on high for 2 minutes. Carefully remove and whisk thoroughly to ensure the cornstarch is fully incorporated. Microwave for another 2 minutes, or until it becomes a thick, clear glaze.
- Finish & Chill: Whisk in the vanilla and food coloring. Allow the glaze to chill before assembling.
- Assemble: Place the chopped strawberries into the prebaked crust and pour the chilled glaze evenly over the top. Garnish with whipped cream and reserved berries. Keep refrigerated.

Tammy's Tips: To ensure your glaze is perfectly smooth and clear, don't skip the step of whisking halfway through the microwave cooking time to prevent cornstarch clumps.
