Ingredients

  • 2 oz. baker's unsweetened chocolate
  • 2 Tbsp vegetable shortening

Instructions

  1. Melt Shortening: Place the vegetable shortening in a small non-stick skillet and melt it over low heat.
  2. Combine: Add the unsweetened chocolate to the skillet. Keep the heat very low and stir constantly until the chocolate is completely melted and the mixture is silky smooth.
  3. Apply: While the ganache is still hot, pour it directly over your iced brownies or cake.
  4. Spread: Tilt the pan back and forth to allow the chocolate to flow naturally and cover the entire surface. Do not use a utensil to spread it; letting it flow ensures a perfectly smooth, mirror-like finish.

Notes

Tammy's Tips

Keep your heat as low as possible when melting the chocolate, as overheating can cause it to seize or lose its shine. By tilting the pan instead of using a spatula, you avoid creating streaks and bubbles, leaving you with that beautiful, professional bakery look.
