Chocolate Covered Cherries - Master Cookbook Recipe # 368
These homemade Chocolate Covered Cherries from Collard Valley Cooks are a decadent treat that rivals any box you’d buy at the store. Ingredients
- 20 maraschino cherries (stems on)
- 4 Tbsp salted butter
- 2 cups powdered sugar
- 1/4 tsp salt
- 3 to 4 Tbsp white corn syrup
- 10 oz. pkg 100% chocolate chips (milk or dark)
- 1 Tbsp vegetable shortening
Instructions
- Prep the Cherries: Drain the cherries and let them sit on paper towels for at least 3 hours. They need to be very dry so the sugar mixture sticks.
- Make the Fondant: In a bowl, mix the salted butter, powdered sugar, salt, and 3 tablespoons of corn syrup. Mix until it is packed solid. If it’s too crumbly, add the fourth tablespoon of corn syrup.
- Wrap: Take about 1/2 teaspoon of the sugar mixture and wrap it around each cherry, pressing evenly to mold it into a smooth ball around the fruit.
- Chill: Place the wrapped cherries in the refrigerator and chill for 3 hours.
- Melt Chocolate: Place the chocolate chips in a microwave-safe measuring cup. Microwave on high for 2 minutes. Stir well, add the shortening, and continue heating in short bursts until the chocolate is hot and thin.
- Dip: Dip each chilled cherry into the chocolate, holding onto the stem. Ensure the chocolate completely seals around the base of the stem to prevent leaking.
- Set: Place dipped cherries on parchment paper. Chill in the refrigerator until completely set.
- Store: Keep in a sealed container in the refrigerator until the day you are ready to serve.

"Enjoy it, they are delicious!" The most important part of this recipe is the seal,make sure that chocolate goes all the way up to the stem so the centers can "liquefy" slightly over time without leaking out. Since the chilled cherries will cool your chocolate quickly, don't be afraid to pop the chocolate back in the microwave for a few seconds to keep it nice and thin for dipping.
