Ingredients

  • 1/2 cup salted butter
  • 3/4 cup light brown sugar (packed)
  • 1/2 cup evaporated milk or whipping cream
  • 1 tsp corn syrup
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Melt & Blend: In a small saucepan, melt the butter over low heat. Add the packed brown sugar and corn syrup, mixing until well blended and the sugar begins to melt.
  2. Whisk: Pour in the evaporated milk (or cream) and salt, whisking thoroughly to combine.
  3. The 3-Minute Boil: Increase the heat to bring the mixture to a boil. Once it reaches a boil, turn the heat down slightly to maintain a steady "low boil" and set a timer for 3 minutes.
  4. Finish: Remove from the heat and whisk in the vanilla extract.
  5. Serve: Carefully pour the hot caramel into a pint-sized mason jar.

Notes

Tammy's Tips

Make sure to use a whisk throughout the process to keep the mixture smooth and prevent the sugar from sticking to the bottom of the pan. Letting the caramel sit for a few minutes after cooking will allow it to thicken up perfectly before you drizzle it over your Old Fashioned Caramel Cake.
