Brown Beauty Cake - Master Cookbook Recipe # 205

This unique cake is a chocolate lover’s dream with a secret twist. By combining semi-sweet chocolate with butterscotch chips, you get a deep, rich "brown beauty" color and a flavor profile that is far more complex than a standard chocolate cake. It’s incredibly moist, thanks to the buttermilk, and has a beautiful fine crumb.

Ingredients

  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup butterscotch chips
  • 1/4 cup boiling water
  • 1/2 cup shortening
  • 1-1/2 cups granulated sugar
  • 3 large eggs
  • 2-1/4 cups self-rising flour
  • 1/2 cup buttermilk

Instructions

  1. Melt the Chips: In a small heat-safe bowl, combine the chocolate chips and butterscotch chips. Pour the boiling water over them and stir until completely melted and smooth. Set aside to cool slightly.
  2. Cream: In a large mixing bowl, beat the shortening and granulated sugar with an electric mixer until light and fluffy.
  3. Combine: Add the eggs and the melted chocolate mixture to the creamed shortening. Continue beating at medium speed for about one minute.
  4. Add Flour & Milk: Add 1 cup of the self-rising flour and mix. Pour in the buttermilk and blend. Finally, add the remaining flour and mix on medium speed for 2 minutes until the batter is smooth.
  5. Bake: Divide the batter between two well-greased and floured round cake pans. Bake at 350°F for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool & Frost: Let the layers cool in the pans for 10 minutes before inverting them onto wire racks. Once completely cool, frost with Master Cookbook Recipe # 206 Brown Beauty Frosting.

Notes

Tammy's Tip: Using boiling water to melt the chips not only makes the process quick but also "blooms" the chocolate, intensifying that rich color and flavor that gives this cake its name!
