Ingredients

  • The Cake:
  • 2-1/2 cups self-rising flour
  • 2-1/4 cups granulated sugar
  • 3/4 cup cocoa powder (Hershey’s)
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 3 large eggs, room temperature
  • 1/2 cup sour cream
  • 1 cup Coca-Cola
  • 1 cup milk
  • 1/2 cup salted butter, melted
  • 1 tsp vanilla extract
  • 3/4 cup cooking oil
  • The Frosting:
  • 1/2 cup butter
  • 6 Tbsp Coca-Cola
  • 2 Tbsp unsweetened cocoa powder
  • 4 cups confectioners' sugar
  • 1 cup chopped pecans

Instructions

  1. Dry Mix: In a medium bowl, whisk together the flour, sugar, cocoa, salt, cinnamon, and baking soda until the cocoa is thoroughly blended.
  2. Wet Mix: In a large mixing bowl, combine the eggs, sour cream, cola, milk, melted butter, vanilla, and oil. Mix until smooth.
  3. Combine: Gradually add the dry ingredients to the wet mixture, about 1/2 cup at a time. Once incorporated, beat on medium-low speed for exactly 2 minutes.
  4. Bake: Pour the batter into a greased and floured 13x9x2 inch pan. Bake at 325°F for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  5. Make Frosting: While the cake is nearing the end of its bake time, combine the butter, cola, and cocoa in a saucepan. Bring the mixture to a boil.
  6. Finish & Frost: Pour the hot mixture over the confectioners' sugar in a large bowl and mix well. Stir in the chopped pecans. Pour the warm frosting over the cake while it is still warm.
