Banana Split Cake - Master Cookbook Recipe # 366

This classic no-bake dessert is a Collard Valley Cooks favorite! It’s creamy, layered, and tastes just like a banana split in cake form.

Ingredients

  • Layer 1: Crust
  • 2 cups graham cracker crumbs
  • 1/2 cup salted butter, melted
  • 1/8 cup granulated sugar
  • Layer 2: Cream Cheese Filling
  • 2 (8 oz.) pkgs cream cheese, room temperature
  • 1/2 cup granulated sugar
  • Layer 3 & 4: Fruit Layers
  • 1 (20 oz.) can crushed pineapple, well-drained
  • 3 to 4 ripe bananas, sliced (remove seeds for a smoother texture)
  • Layer 5: Pudding Layer
  • 2 (3.4 oz.) pkgs instant vanilla pudding
  • 2 cups milk
  • 8 oz. carton Cool Whip (folded in)
  • Layer 6: Topping
  • 8 oz. carton Cool Whip

Garnish Suggestions

  • 1 cup chopped pecans or almonds
  • Maraschino cherries (patted dry)
  • Hot fudge or chocolate syrup
  • Extra banana slices (add just before serving)

Instructions

  1. Prepare the Crust: Mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a 9x13 inch pan. Freeze for 10 minutes to set.
  2. Mix Cream Cheese Layer: Beat the softened cream cheese and sugar together until smooth. Spread evenly over the chilled crust.
  3. Add Fruit Layers: Spread the drained crushed pineapple over the cream cheese layer. Top with a layer of sliced bananas. (Tammy's tip: Remove the center seeds of the bananas for the best texture!)
  4. Prepare Pudding Layer: In a separate bowl, whisk together the vanilla pudding mix and milk until it begins to set (about 5 minutes). Gently fold in 8 oz. of Cool Whip. Spread this mixture over the bananas.
  5. Final Topping: Spread the remaining 8 oz. of Cool Whip over the pudding layer.
  6. Decorate & Chill: Drizzle with hot fudge or chocolate syrup. Garnish with cherries, nuts, and additional banana slices if desired.
  7. Serve: For the best results, refrigerate for at least 4 hours (or overnight) before slicing to let the layers set up perfectly.
