Banana Cream Pie - Master Cookbook Recipe # 431

Ingredients
- For the Filling:
- 2 medium/large ripe bananas
- 2 ½ cups milk
- 2 large eggs
- ½ cup granulated sugar
- ⅓ cup all-purpose flour
- ¼ tsp salt
- 3 tbsp salted butter
- 1 tsp vanilla extract
- 1 cup graham cracker crumbs (for layering/topping)
- Whipped cream or Cool Whip (for topping)
- For the Graham Cracker Crust (Master Cookbook Recipe # 452):
- 1 ½ cups graham cracker crumbs
- ⅓ cup granulated sugar
- ¼ cup salted butter
Instructions
- Prepare the Crust (Master Cookbook Recipe # 452)
- Mix: Combine crushed graham crackers, sugar, and melted butter.
- Form: Press firmly into a pie plate.
- Cook: Bake at 350°F for 10 minutes OR microwave for 90 seconds.
- Cool: Must be completely cool before filling.
- 2. Make the Homemade Pudding
- Whisk: In a microwave-safe bowl, whisk eggs. Add milk, sugar, flour, and salt; whisk until smooth.
- Microwave: Cook on high for 2 minutes, remove, and whisk.
- Thicken: Return to microwave for 3 minutes, then whisk again. Continue in 2-minute intervals until thick.
- Finish: Stir in vanilla and butter until glossy.
- 3. Assemble the Pie
- First Layer: Pour half of the warm pudding into the cooled crust.
- The Bananas: Slice bananas (using the "seeding" technique to prevent browning) and layer over the pudding.
- The Crunch: Sprinkle a layer of graham cracker crumbs over the bananas.
- Final Layer: Pour the remaining pudding over the top and smooth.
- 4. Chill and Serve
- Set: Let it sit at room temperature for 30 minutes, then refrigerate.
- Top: Once cold (or the next day), top with whipped cream/Cool Whip and extra crumbs.

Tammy's Tips:
The Microwave Rule: The pudding must be thick before it goes in the fridge; it won't thicken once cold!
The "Granny" Secret: Removing the seeds from the center of the banana slices keeps them from turning brown, making the pie look fresh for days.
