Banana Pudding - Master Cookbook Recipe # 362

Ingredients
- For the Pudding:
- 1/3 cup Flour (Self-rising or All-purpose)
- 1/2 cup Sugar
- Dash of Salt
- 2 1/4 cups Milk
- 4 Egg Yolks (Save the whites for the meringue!)
- 2 tbsp Butter
- 2 tsp Vanilla Extract
- The Layers:
- 1 box Vanilla Wafers
- 3 to 4 Ripe Bananas, sliced thin
- For the Meringue:
- 4 Egg Whites
- 1/4 cup Sugar
- 1/4 tsp Cream of Tartar
Instructions
- Make the Pudding (Microwave Method):
- Whisk flour, sugar, and salt in a microwave-safe batter bowl.
- Whisk in milk and the 4 egg yolks until smooth.
- Microwave for 3 minutes, then whisk thoroughly to prevent lumps.
- Microwave for another 3 minutes. Whisk again. It should be creamy but slightly runny (it thickens as it sets).
- Whisk in the butter and vanilla until the butter is melted. Set aside.
- 2. Whip the Meringue:
- In a very clean, dry bowl, beat the 4 egg whites until frothy.
- Add the 1/4 cup sugar and cream of tartar.
- Beat until stiff peaks form (it should look glossy and stand up on its own).
- 3. Assemble the Layers:
- Pour half of your warm pudding into a baking dish.
- Add a layer of vanilla wafers followed by a layer of thinly sliced bananas.
- Pour the remaining pudding over the top.
- 4. Add the "Mama-Style" Top:
- Spread the meringue over the hot pudding, using your spoon to pull up "Ida Style" tall peaks.
- Decorate the edges with remaining wafers and a sprinkle of wafer crumbs.
- 5. Bake:
- Bake at 325°F for 20 minutes. (Using a lower temp like 325°F instead of 350°F keeps those tall peaks from getting too brown).

- The "Granny" Secret: If serving the next day, slice your bananas down the middle and scrape out the seeds with a spoon before slicing. This keeps them from turning brown!
