Apple Nut Bread - Master Cookbook Recipe # 134

This isn't your average quick bread,the addition of sour cream and the specific baking temperature change create a perfectly golden crust with a rich, tender middle. Using Golden Delicious apples provides a mild sweetness that doesn't overpower the warm cinnamon and nutty pecans.

Ingredients

  • 2 cups Golden Delicious apples, peeled and chopped
  • 1 lemon (for juice)
  • 2 cups self-rising flour
  • 1 cup brown sugar
  • 1 cup pecans, chopped
  • 1/2 cup raisins
  • 1/2 cup sour cream
  • 1/2 cup salted butter (melted) or vegetable oil
  • 3 large eggs
  • 1/3 cup all-purpose flour (for coating)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Prep Apples: Peel and chop your apples. Toss them with a squeeze of fresh lemon juice to keep them from turning brown while you prep the rest.
  2. Coat Fruit & Nuts: In a small bowl, toss the raisins and chopped pecans with the 1/3 cup of all-purpose flour. This little trick keeps them from sinking to the bottom of your loaf!
  3. Mix Wet Ingredients: In a large bowl, thoroughly whisk together the eggs, oil (or melted butter), and brown sugar. Stir in the vanilla, sour cream, and cinnamon until smooth.
  4. Combine: Gradually stir in the self-rising flour until just blended. Gently fold in your chopped apples and the flour-coated raisins and pecans.
  5. Bake: Pour the batter into a well-greased pan of your choice. Bake at 400°F for 20 minutes, then lower the heat to 350°F and continue baking for another 35-40 minutes until a toothpick comes out clean.

Notes

Tammy’s Tip: "Now, don't forget to toss those nuts and raisins in that bit of flour! It's the guarantee for making sure every single slice of your bread has plenty of goodies in it instead of them all huddled at the bottom. It makes for a beautiful presentation when you slice it up!"
