Apple Skillet Cake - Master Cookbook Recipe # 200

This beautiful upside-down style cake is a true showstopper. By cooking the apples in a cast iron skillet with butter and brown sugar before topping them with a rich, buttermilk batter, you create a caramelized fruit topping that is simply irresistible. Ingredients

  • For the Apple Base:
  • 4 Tbsp salted butter
  • 2/3 cup light brown sugar, packed
  • 3 large, firm Golden Delicious apples, sliced thin
  • 1/2 tsp cinnamon mixed with 1/4 cup granulated sugar (optional)
  • For the Cake Batter:
  • 1/2 cup shortening
  • 1/2 cup light brown sugar, packed
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1-1/2 cups self-rising flour
  • 3/4 cup buttermilk
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Skillet: Melt the 4 tablespoons of butter in a 12-inch cast iron skillet (or a 3-inch deep 10-inch skillet). Once melted, add the 2/3 cup brown sugar and the sliced apples. If desired, sprinkle the cinnamon-sugar mixture over the apples.
  2. Cream the Batter: In a separate bowl, cream together the shortening, 1/2 cup brown sugar, and 1 cup granulated sugar. Add the eggs one at a time, beating well after each addition.
  3. Mix: Add the self-rising flour, buttermilk, and vanilla extract. Mix the batter for 2 minutes until smooth.
  4. Assemble: Ensure the sides of the skillet are sprayed well with non-stick spray. Gently pour the cake batter over the prepared apples in the skillet.
  5. Bake: Bake at 350°F for 35 to 45 minutes, or until the cake is set and golden.
  6. The Flip: Using oven mitts, carefully flip the skillet onto a large serving plate immediately after removing it from the oven. Use a spatula to reposition any apples that may have stuck to the pan.

Notes

Tammy's Tip: Apples tend to darken over time, so this cake is best served on the day it's made. Also, be sure to use a large enough skillet,a standard 10-inch skillet isn't deep enough and the batter will run over!
