Texas Hash with Beans - Master Cookbook Recipe # 84
A hearty, budget-friendly meal that combines beef, rice, and beans into a delicious baked casserole.

Ingredients
- The Sauté:
- 1 onion, chopped
- 3 Tbsp bell pepper, chopped
- 3 Tbsp olive oil
- The Meat:
- 1-1/2 lb. ground chuck
- The Mix:
- 1 cup uncooked rice
- 14.5 oz can kidney beans, drained
- 14.5 oz can diced tomatoes
- 1-1/2 cups hot boiling water
- 2 tsp beef bouillon granules
- Seasonings:
- 1 Tbsp chili powder
- 2 tsp salt
- 1 tsp black pepper
- Topping:
- 8 oz package grated cheese (Mexican blend)
Instructions
- Sauté & Brown: In a large skillet, sauté the onion and bell pepper in olive oil for 4 to 5 minutes. Add the ground chuck and cook until browned and broken apart. Drain the excess grease.
- Prep the Liquid: Microwave the water in a liquid measuring cup until boiling (about 1 minute). Stir in the beef bouillon granules until dissolved.
- Combine: In a separate large bowl, combine the bouillon water, chili powder, diced tomatoes, drained kidney beans, salt, pepper, and uncooked rice. Mix thoroughly.
- Incorporate Meat: Stir half of the cooked meat mixture into the bowl with the rice and beans.
- Layer: Spray a 4-to-5-quart baking dish with cooking spray. Pour the mixture from the bowl into the dish.
- Top: Sprinkle the shredded cheese over the top, then add the remaining half of the meat mixture on top of the cheese.
- Bake: Bake at 350°F for 45 minutes until the rice is tender and the flavors are perfectly melded.
