Ingredients
- 2 large Sweet potatoes (cooked and whipped)
- 1/4 cup Salted butter
- 1/2 cup Granulated sugar
- 1/4 tsp Cinnamon (optional)
- 1 recipe Fried Pie Dough (Master Cookbook Recipe # 429)
- 1/2 cup Butter (for frying)
- Corn oil (for frying)
- Cinnamon sugar (for coating)
Instructions
- Prepare Filling: Whip your cooked sweet potatoes with 1/4 cup butter, sugar, and cinnamon until the mixture is smooth and fluffy.
- Assemble: Place a large heaping tablespoon of the sweet potato filling in the center of a rolled-out piece of pie dough.
- Seal: Fold the dough over to create a half-moon shape. Lightly wet the edges of the dough with water, then press them firmly together with the tines of a fork to seal.
- Heat the Oil: Fill a skillet with about 1 inch of corn oil and preheat it. Add the 1/2 cup of butter to the oil for extra flavor.
- Fry: Carefully place the pies into the skillet. Fry until the bottom is golden brown, then flip to brown the other side.
- Finish: While the pies are still warm, roll them in or sprinkle them generously with cinnamon sugar. Place them on a wire cooling rack to stay crisp.
