Ingredients
- Flour: 1 1/2 cups self-rising flour
- Fat: 4 Tbsp shortening
- Liquid: 1/2 cup milk
Instructions
- Cut in Shortening: In a medium bowl, combine the self-rising flour and shortening. Mix until the mixture reaches a pea-sized consistency.
- Add Milk: Pour in the milk and stir until the dough just comes together.
- Knead: Turn the dough out onto a well-floured surface. Flip the dough 6 to 7 times to help it become manageable and slightly smooth.
- Roll Out: Roll the dough out very thin. As you roll, incorporate enough flour so that you can lift the dough in a single sheet without it sticking or tearing.
- Cut Rounds: Use the bottom of a rotary sifter (or a large round cutter) to cut out circles for your pies.

Tammy's Tips
The secret to a great fried pie is making sure your dough is rolled thin enough to get crispy but strong enough to hold your filling. Don't be afraid to use extra flour on your workspace; it's the key to handling the dough easily without it falling apart!
