Ingredients

  • 1 Graham Cracker Crust (Master Cookbook Recipe # 452)
  • 1 cup Fresh strawberries (cut into cubes; do not mash)
  • 8 oz. Cream cheese (room temperature)
  • 1/4 cup Salted butter (room temperature)
  • 2 tsp Strawberry flavored gelatin (like Jell-O)
  • 1/4 cup Granulated sugar
  • 16 oz. Cool Whip topping (divided)
  • 1 cup Sliced strawberries (for garnish)

Instructions

  1. Cream the Base: In a large mixing bowl, cream together the room-temperature butter and cream cheese until the mixture is completely smooth and creamy.
  2. Sweeten and Fluff: Add the granulated sugar and beat until the mixture is light and fluffy.
  3. Flavor: Add the strawberry gelatin powder and mix well. Then, gently fold in 2 cups of the Cool Whip topping.
  4. Fold in Berries: Carefully fold in the cubed strawberries. Be very gentle to ensure you do not mash the fruit.
  5. Assemble: Spread the cheesecake mixture evenly into the prepared graham cracker crust.
  6. Garnish & Chill: Top with the remaining Cool Whip and garnish with the sliced strawberries. Refrigerate until firm and ready to serve.

Notes

Tammy's Tips: When preparing the filling, it is vital that you do not smash or mash the strawberries, as the extra juice will cause the pie to become runny rather than firm. I recommend using just under two teaspoons of the flavored gelatin to ensure you keep that classic cheesecake taste without the gelatin flavor becoming too overpowering. This recipe is also incredibly versatile, so feel free to experiment with different fruit and Jello combinations like peach or raspberry for a whole new flavor profile!
