Ingredients

  • 1/2 cup (1 stick) Salted butter, room temperature
  • 3 1/2 cups Powdered sugar
  • 1/2 cup Strawberry Topping (Master Cookbook Recipe # 421), strained very well

Instructions

  1. Prepare the Strawberries: Place your strawberry topping in a fine-mesh strainer and press firmly with a spoon to remove as much syrup as possible. You want the pulp, not the extra juice.
  2. Cream the Base: In a large mixing bowl, beat the softened butter until smooth.
  3. Mix: Gradually add the powdered sugar and the well-strained strawberry pulp. Mix thoroughly until the frosting is light, fluffy, and a beautiful pink color.
  4. Finish: If the icing is too thick, you can add a tiny drop of the strawberry syrup back in; if it's too thin, add a little more powdered sugar.

Tammy’s Tips

The secret to a perfect frosting is ensuring your strawberries aren't too syrupy, or the icing will be a "runny mess." For a beautiful presentation on layered cakes, try topping the final frosted cake with a few strawberry preserves!
