Ingredients

  • 1 pack Smoked link sausage (sliced into rounds)
  • 4 Medium potatoes (chopped into 1/2” cubes)
  • 3 Large carrots (chopped into 1/2” cubes)
  • 1 Large onion (chopped)
  • 1/4 cup Sweet pepper (chopped, optional)
  • 1/2 tsp Red pepper flakes (optional)
  • Salt & black pepper to taste

Instructions

  1. Start the Sausage: In a large non-stick pot, skillet, or braiser with a lid, add the sliced sausage. Cook over medium heat while you begin prepping your vegetables.
  2. Add Onions: Chop your onion and add it to the pot with the sausage, stirring to combine.
  3. Steam the Carrots: Chop your carrots and add them to the pot. Cover with the lid and cook for 5 minutes.
  4. Add Potatoes and Peppers: While the carrots are cooking, chop your potatoes. Once the 5-minute timer is up, add the potatoes, sweet peppers, and red pepper flakes (if using) to the pot.
  5. Simmer: Replace the lid and cook on medium-low for 5 minutes.
  6. Finish: Open the lid, give everything a good stir, and then replace the lid for a final 5 minutes of cooking. Once the potatoes have been in for a total of 10 minutes with the lid on, your hash is ready!

Notes

Tammy’s Tips: The secret to this hash is all in the timing! Giving the carrots that 5-minute head start ensures they are just as tender as the potatoes in the end. This dish is vibrant and filling on its own, but we really love serving it alongside some fresh summer vegetables and a big wedge of hot cornbread. If you like a little extra kick, don't be shy with those red pepper flakes!
