Smoked Sausage Simmer - Master Cookbook Recipe # 502

This Smoked Sausage Simmer is a fantastic, quick-fix meal that brings together the smoky richness of sausage with the natural sweetness of simmered cabbage and tomatoes. It’s one of those "comfort in a skillet" dishes that is as easy to make as it is to clean up. The addition of butter and diced tomatoes creates a light, savory sauce that perfectly coats the vegetables, making every bite flavorful and satisfying.

Ingredients

  • Smoked sausage (sliced into circles)
  • 1 medium Head of cabbage (chopped)
  • 15 oz. can Diced tomatoes
  • 1 medium Onion (sliced into strips)
  • 4 Tbsp Salted butter
  • Olive oil (for sautéing)
  • 1/2 tsp Salt & 1/2 tsp Black pepper
  • Optional: 1 tsp Cajun or sausage seasoning

Instructions

  1. Sauté the Base: In a large saucepan or deep skillet, add a splash of olive oil over medium heat. Sauté the sliced onion and smoked sausage together until the sausage is browned and the onions are soft and fragrant.
  2. Combine: Add the chopped cabbage and the entire can of diced tomatoes (including the juices) to the skillet.
  3. Season and Butter: Season the mixture well with salt and pepper (and Cajun seasoning if you’re using it). Top the mixture with the 4 tablespoons of butter.
  4. Simmer: Cover the pan and let everything simmer on medium-low heat until the cabbage has reached your desired level of softness.
  5. Serve: This is wonderful served hot right out of the pan!

Notes

Tammy’s Tips: This is such a versatile dish! While it’s absolutely delicious on its own with a big slice of hot cornbread, we also love serving it over a bed of fluffy white rice to soak up all those tomato and butter juices. If you like a little extra kick, don't be afraid to use a spicy smoked sausage or be generous with that Cajun seasoning. It’s a simple, hearty meal that never fails to please the crowd!
