This hearty, layered meal is a classic "everything-but-the-kitchen-sink" dish that has been a family favorite for generations. It’s a complete meal in one pan,combining beef, potatoes, beans, and onions into a savory, slow-baked masterpiece. It’s simple, filling, and perfect for feeding a hungry crew!

Ingredients

  • 1.5 lb. lean ground chuck (raw)
  • 4 medium potatoes, thinly sliced
  • 3 medium onions, sliced
  • 2- 15.5 oz. cans kidney beans, drained
  • 10.5 oz. can tomato soup
  • 8 to 10 oz. shredded cheese
  • Seasonings: Salt, pepper, chili powder, and steak rub (to taste)

Instructions

  1. Layer Potatoes: Preheat your oven to 350°F. In a greased 9x13-inch casserole dish, create a layer of thinly sliced potatoes. Season them generously with salt, pepper, and chili powder.
  2. Add Beans & Onions: Add half of the sliced onions and all of the drained kidney beans over the potatoes. Sprinkle with another dash of chili powder.
  3. Add Beef: Evenly distribute the raw ground chuck over the bean layer. Season the meat well with steak rub (or your favorite beef seasoning).
  4. Top & Initial Bake: Add the remaining sliced onions on top of the beef. Pour the tomato soup over the entire dish. Cover and bake for 1 hour.
  5. Add Cheese: Remove the dish from the oven and sprinkle the shredded cheese evenly over the top.
  6. Final Bake: Return to the oven and bake uncovered for an additional 30 minutes until the potatoes are tender and the cheese is bubbly and golden. Serve with warm, crusty bread.

Notes

Tammy’s Tips "If you have family members who aren't fans of onions, you can omit the fresh onions and use onion powder instead to keep that great flavor." The key to this dish is the slow bake, which allows the juices from the beef and onions to season the potatoes perfectly. It truly is a "set it and forget it" kind of meal!
